Ahh, Pozole!

One of my favourite dishes to make so light and so delicious.

Now the recipe might not be authentic but I think the flavours are just perfect. I Like to add my favourite topping to it.

while the original recipe requires pork I opted for chicken and made my own broth instead. Just a simple chicken broth

Cooking is about experimenting and exploring what flavour you love. Once you try enough flavours you will have the tools to cook when you are in a pinch.

Ingredients

1 onion

3 Garlic cloves

1 dried ancho chiles, stem and seeds removed

3 dried guajillo chiles, stem and seeds removed

3 (15-oz.) cans hominy, drained and rinsed

Your own chicken broth or store brought.

Stage one:

Toast the dried chillies on a pan until fragrant and then place it in a stove and bring to a boil with your onion and garlic and cook it for 10 to 15 min. Take it out remove the seed from the chillies if you don’t want it to hot.

Blits all the ingredients and set it aside.

Stage two

Once your chicken broth is made bring it to a boil and mix in the chillies and the hominy and let it cook for another 10-15 minutes. make sure you add salt and paper to taste.

Stage three

Plate it, add some of the chicken if you made the chicken broth from scratch. I like to add in lemon, cilantro, avocado.

But you can add slithers of fried tortillas for that added crunch and radish.
